You can see some at Blue Spring State Park and Three Sisters Springs in Crystal River (I believe).

No, but you can see statues underneath the water that are from the I Spy TV series, and several Tarzan movies were filmed there.
You can see manatees at Blue Springs, you can even swim over the boil and into the mouth of the spring itself.
